Sun-dried Tomato Pasta

I love sun-dried tomatoes. They have an intense sweet-tart flavor regular tomatoes don't have. Since they're dried, they are very chewy, if not in some sort of liquid (usually oil). I decided to make pasta with these tomatoes, and this recipe is so easy and healthy too! This recipe, along with most, is super customizable, so feel free to add other seasonings and try different proteins. I like to serve this with some bread and salad because what's a pasta dish without bread, right?!


Ingredients:

1 pound whole wheat pasta

5 sausage links (or any protein you'd like)

5 ounces sun-dried tomatoes in oil

1/4 cup of olive oil

1 small onion, chopped

5 garlic cloves, minced

1 cup of chicken stock (any stock works)

1 cup of heavy cream

2 cups of spinach

1/2 tablespoon garlic powder, oregano

1 tablespoon red chili flakes (optional)

salt, pepper, parmesan (to taste)


Directions:

  1. Cook Pasta according to its instruction and sausage to your liking, and put to the side.

  2. In a large saucepan on medium heat, put olive oil inside, and after 30 seconds, place onions and garlic.

  3. Add sun-dried tomatoes and stir until fragrant, about 2 minutes.

  4. Add chicken stock and heavy cream, stir.

  5. Add seasonings, sausage, pasta, and stir.

  6. Add spinach and when it wilts, fold it in.

  7. Mix and cover for two minutes, so everything melds together.

  8. Reduce heat, and serve with parmesan cheese.
